Ingredients For mediterranean orzo

1 lborzo pasta

2 Tbspwater

1/2 csun dried tomato halfs

1 1/4 cyellow peppers 1/4" dice

1/4 cgreen peppers 1/4" dice

1 cred peppers 1/4" dice

1/4 bunchfresh parsley, finally chopped

1 bunchscallions, chopped
-
3/4 cred onions 1/4" dice

1/2 cripe olives, sliced
-
1/2 cfeta cheese, crumbled

1 Tbspwhite vinegar
-
2 Tbspolive oil
-
1/2 tspblack pepper
How To Make mediterranean orzo

1Prepare orzo as per package direction. Omitting salt and oil.

2Cover with vented film, and refrigerate until needed.

3When the orzo is cold add all the ingredients together in a bowl.

4Chill for 1 hour and serve
