Ingredients For greek rice salad

  • 3 c
    cooked rice
  • 2
    6-oz. jars marinated artichoke hearts, chopped (drain and reserve marinade)
  • 1 lg
    tomato, seeded and chopped
  • 1/2 lg
    cucumber, seeded and chopped (i prefer english cucumber)
  • 1 md
    red onion, chopped
  • 1 c
    feta cheese, crumbled
  • 1
    2 oz. can black olives, drained and sliced
  • 1/4 c
    fresh parsley, chopped
  • 1 Tbsp
    fresh lemon juice
  • 1/2 tsp
    dried oregano
  • 1/2 tsp
    lemon pepper seasoing
  • lettuce leaves for serving

How To Make greek rice salad

  • 1
    Combine cooked rice and remaining ingredients in a large bowl. Cover and refrigerate for at least 1 hour prior to serving.

    Just before serving, drizzle the reserved artichoke marinade over salad, toss to blend. Spoon onto a lettuce-lined salad platter.
