Ingredients For greek rice salad

3 ccooked rice

26-oz. jars marinated artichoke hearts, chopped (drain and reserve marinade)

1 lgtomato, seeded and chopped

1/2 lgcucumber, seeded and chopped (i prefer english cucumber)

1 mdred onion, chopped
-
1 cfeta cheese, crumbled
-
12 oz. can black olives, drained and sliced
-
1/4 cfresh parsley, chopped
-
1 Tbspfresh lemon juice
-
1/2 tspdried oregano
-
1/2 tsplemon pepper seasoing

lettuce leaves for serving
How To Make greek rice salad

1Combine cooked rice and remaining ingredients in a large bowl. Cover and refrigerate for at least 1 hour prior to serving.

2Just before serving, drizzle the reserved artichoke marinade over salad, toss to blend. Spoon onto a lettuce-lined salad platter.
