I have some frends on special diets and everyone loves this salad.
Blue Ribbon Recipe
This is a very good pasta salad recipe for summer cookouts and will be great if you need a gluten-free option. It's a hearty pasta salad full of flavor and texture. We liked the little spice from the salami. As it's stirred, the Feta cheese covers the other ingredients. Fresh chopped basil throughout it is tasty. The dressing is just enough to coat the mixture and let all the fresh ingredients shine. If you like more of a wet pasta salad, we'd suggest doubling the dressing recipe.

Ingredients For gluten-free pasta salad

1 pkggluten-free rotelli pasta

1 pkggrape tomatoes, halved, 10 oz

4 ozFeta cheese, crumbled

1/4 lbdeli salami, cubed

bunchfresh basil, chopped
-
1/2red pepper, chopped
-
1 bunchgreen onions, chopped

1 canblack olives, halved, 6 oz
- DRESSING
-
1/3 colive oil
-
3 Tbsplemon juice
-
2 clovegarlic, minced
-
1 1/2 tspdried oregano
-
1/2 tspsalt
-
1/4 tspfresh ground black pepper
How To Make gluten-free pasta salad

1Boil gluten-free pasta according to package directions and drain.

2In a large mixing bowl, place cooled pasta, halved tomatoes, Feta cheese, salami, chopped basil, chopped bell pepper, and halved black olives.

3Toss together.

4Add chopped green onions and toss.

5In a small bowl, whisk together dressing ingredients.

6Pour over pasta salad and toss together well. You can add artichoke hearts if desired too.
