creamy tortellini salad
I've always loved this recipe, but I've always felt the package ranch dressing was too salty. I decided to make a homemade ranch dressing to give this salad a fresh taste. I like this salad even more with this change to the recipe. I hope you do too.

1large or 2 small cloves of garlic

1 1/2 Tbspsalt

1/4 cparlsey

1 tspfresh oregano

1 tspfresh tarragon

2scallions
-
1 tspworcestershire sauce

1/2 tsppaprika, sweet mild

1/2 tspcayenne pepper (optional)

2-3dashes tabasco (optional)

1 cmayonaise
-
1/2 csour cream
-
1 cbuttermilk
-
1 tspwhite wine vinegar
- SALAD PREPARATION

1 bagcheese tortellini cooked and cooled

1 cham (julienned)

1 cpea pods (lighly steamed)
-
3/4 cswiss cheese (cubed)
-
2scallions (minced)
-
1/4 cred bell pepper (minced)

2 chomemade ranch dressing
How To Make creamy tortellini salad

1Finely mince the garlic and then add the salt and mash it into a paste.

2Finely mince all the fresh herbs.

3Combine the mayonnaise, sour cream, add the minced herbs and garlic. Add the milk to thin the dressing.

4Add the remaining ingredients. You can adjust the taste to your preference by adding more vinegar, paprika, cayenne or Worcestershire to your liking.

5Cook tortellini according to package directions and cool.

6Add ham, swiss cheese, pea pods, scallion and red bell pepper to the tortellini.

7Add ranch dressing and combine all ingredients. Add more buttermilk if the dressing is too thick.

8This salad tastes the best after it has been allowed to sit for several hours.
