My sister in law makes a great salad like this, with halved grape tomatoes & green olive slices. Everyone loves it, but the kids always seem to pick those two ingredients out. This is my version of it without them.Enjoy! **** You can easily cut this recipe in half .**********

Ingredients For creamy cucumber pasta salad-my way

1 boxditalini pasta
-
1cucumber, seeded & diced small
-
1red bell pepper seeded & diced small
-
2celery stalks, diced small
-
1 mdsweet onion, diced small
-
1/2block colby jack cheese, cubed very small
-
1/2 csour cream
-
1/2 cmayonaise
-
1/4 Tbspdried dill
-
2 tspsugar
-
1/4 Tbspcelery salt
-
1/4 Tbspgalric powder
-
1 tsplemon juice
-
salt & black pepper, to taste
How To Make creamy cucumber pasta salad-my way

1Cook pasta according to directions( i cooked 1 minuter longer) Drain & cool. ( I put mine in the fridge while I went to the store.)

2Dice veggies & cheese, add to cool pasta.

3Mix the rest of the ingredients in a separate bowl until well blended. Taste, and adjust seasonings as needed.

4Pour over pasta mixture & stir well. Refridgerate for at least 2 hours before serving.

5Optional: Add some zesty Italian dressing the next day if it looks too dry.
