thea's spinach salad
This salad is a healthier version than those with a bacon dressing. I've been making this for many years and it's every bit as good.

Ingredients For thea's spinach salad

10 ozfresh spinach

6 slicebacon, cooked and crumbled

4mushrooms, sliced

3hard boiled eggs, sliced

2 tspgrated onion

1 tspsalt

1/2 tspblack pepper

2 Tbspdijon mustard

2 Tbspred wine vinegar

8 Tbspcanola oil

1/2 tsplemon juice
How To Make thea's spinach salad

1Rinse and drain the spinach. Tear any large leaves and remove any long stems. Place spinach, bacon, mushrooms and eggs in a large bowl. Combine remaining ingredients with whisk. Pour over spinach, toss and serve.
