This salad is a healthier version than those with a bacon dressing. I've been making this for many years and it's every bit as good.

Ingredients For thea's spinach salad

  • 10 oz
    fresh spinach
  • 6 slice
    bacon, cooked and crumbled
  • 4
    mushrooms, sliced
  • 3
    hard boiled eggs, sliced
  • 2 tsp
    grated onion
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 2 Tbsp
    dijon mustard
  • 2 Tbsp
    red wine vinegar
  • 8 Tbsp
    canola oil
  • 1/2 tsp
    lemon juice

How To Make thea's spinach salad

    Rinse and drain the spinach. Tear any large leaves and remove any long stems. Place spinach, bacon, mushrooms and eggs in a large bowl. Combine remaining ingredients with whisk. Pour over spinach, toss and serve.
