My Gram used to make this all the time...brings back so many memories...enjoy! This recipe can easily be halved.

Ingredients For spinach & bacon salad w/ hot bacon dressing

3/4 lbbacon, cooked and crumbled

1/2 cgreen onions, sliced - green tops too

2 Tbspflour
-
salt& pepper to taste
-
1/3 cred wine vinegar
-
1 1/2 tspsugar
-
1 cbeef or chicken broth
-
2 cfresh sliced mushrooms
-
8 cfresh spinach leaves - torn
-
a fewhard boiled eggs, chopped are also great in this salad - optional
-
friedonions - like durkee , crumbles
How To Make spinach & bacon salad w/ hot bacon dressing

1In a medium sized skillet, cook bacon until crisp, when finished, drain on paper towels, then crumble. Reserve 1/4 cup bacon grease. Place torn spinach and mushrooms in a large serving bowl and toss. Set aside.

2Place reserved bacon grease back into the same pan as you fried the bacon. Over medium heat, cook the green onions until tender.

3Stir in the flour and cook an additional minute.

4Pour in the chicken broth, vinegar, sugar - cook until slightly thicken, won't take long.

5Now, pour the hot dressing over the spinach - tossing to coat well. Sprinkle on the crumbled bacon and french fried onions if using. Salt and pepper to taste...
