A wonderful spring time salad that goes well w/ a light meal or as a lunch.

Ingredients For spinach-bacon salad w/ feta dressing

  • 1/2 c
    feta cheese
  • 3 Tbsp
    olive oil
  • 2 Tbsp
    red wine vinegar
  • 2 tsp
    dijon mustard
  • 2 tsp
    finely chopped shallot
  • pinch of sugar
  • salt and pepper to taste
  • 8 slice
    canadian bacon
  • 8 oz
    fresh baby spinach
  • 8 oz
    sliced mushrooms
  • 2
    sliced scallions, white and green parts

How To Make spinach-bacon salad w/ feta dressing

    In a cruet jar, add cheese, oil, vinegar, mustard, shallots and a pinch of sugar. Shake to combine, season w/ salt and pepper. Shake again.

    In skillet, over medium heat, cook bacon until crisp, transfer to paper towels to drain. Cool. Crumble.

    In lg serving bowl, toss together spinach, mushrooms, scallions and bacon. Drizzle w/ dressing, toss gently.
