My church has a potluck once a month. It's a great opportunity to try new foods, right? And this salad should not have worked in that setting -- it's too different than the norm for my area (Dutch Reformed). But, a lady named Pat tried it and brought it to share, and it is fabulous. And easy. Bless her for sharing the recipe, too!

1/2 cchopped red onion

1 cgreen or red pepper

1 cmayo

2 ccheddar cheese

10 ozchili cheese corn chips, crushed
How To Make southwestern corn salad

1Mix the first five ingredients together.

2Add the corn chips just before serving.
