This is an amazing gluten free/vegan recipe. I live with a couple people who are gluten free and also a vegan so this was a good choice. DELICIOUS!!! Don't let the ingredients steer you away from this fresh and sweet treasure :)

Ingredients For red summer salad

2 Tbspbalsamic vinegar

2 Tbspfreshly squeezed lemon juice

1/2 cextra-virgin olive oil

sea salt and freshly ground pepper

1 ptcherry tomatoes

2large tomatoes
-
3 tspgranulated sugar
-
1 Tbspfresh chopped tarragon

4strawberries hulled and cut into slices
-
1 cwatermelon cubed and cold
How To Make red summer salad

1Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Taste for seasoning; add salt and pepper and a teaspoon of sugar to sweeten. Set aside.

2Cut the cherry tomatoes in half and slice the large tomatoes into wedges. Arrange in a single layer; season with salt and pepper and sprinkle with the remaining sugar. Add the watermelon cubes, tarragon, and strawberries; toss.

3Divide the tomato mixture among plates. Drizzle with more dressing, and serve immediately.
