I love the Mexican corn that vendors serve on the street. This is served without muss or fuss, got rid of the mayo to make it kinda healthy. It goes great with anything off the grill. ..or not.

Ingredients For mexican street corn salad

  • 4
    ears of corn
  • 1 c
    yogurt, plain
  • 1/2
    block of cotija cheese
  • 1&1 / 2 tsp
    chili powder
  • 1 / 2 tsp
    cayenne pepper
  • 2 tsp
    chopped green onions
  • juice of 2 limes

    Grill corn or boil it. Once corn has cooled, remove from the cob with a sharp knife into a mixing bowl. Add all the other ingredients. Crumble cheese into bite size pieces, and add to the corn, adjust the seasonings to your liking. Serve room temperature or slightly warmed.
