This is my go to salad when I'm in a time crunch! This salad is a big hit every time and I never have any left overs to bring home!

Ingredients For mexican corn salad

  • 3 can
    15.25 ounce cans of corn~drained
  • 1 c
    or a scant more of shredded cheddar cheese
  • 1/2 sm
    onion~diced
  • 1 c
    mayonnaise~i used hellmans
  • 1 1/2 c
    crushed chili cheese fritos (more or less to taste)

How To Make mexican corn salad

  • 1
    Mix every thing together EXCEPT the fritos. Right before serving mix the crushed chili cheese fritos in the salad and serve. Quick and easy! Enjoy!
