marinated cucumbers
I happen to come across this recipe years ago, in a cookbook titled: Cooking with 5 Ingredients.

Ingredients For marinated cucumbers

3cucumbers, peeled & thinly sliced

1 (4 oz.)jar chopped pimientos, drained well

2/3 cupvegetable oil

1/4 cupwhite wine vinegar

1/2 tsp.salt

1 (8 oz.)container sour cream
How To Make marinated cucumbers

1In a bowl mix together, the cucumbers and pimientos.

2In another bowl, combine the vegetable oil, vinegar and salt.

3Pour the oil/vinegar mixture over the cucumbers and pimientos, and refrigerate for 1 hour.

4To serve, drain oil and vinegar from the cucumbers and pimientos, then add sour cream, and toss gently. Refrigerate 1 to 2 hours before serving. Upon serving, sprinkle salad with black pepper.
