kicked-up egg salad

I found a new product, Hormel real bacon bits with jalapeño added. Just used them in egg salad, and they are really good! Here is the recipe I used.

Ingredients For kicked-up egg salad

  • 2 lg
    eggs, hard cooked
  • 3 Tbsp
    duke's mayonnaise
  • 1/2 tsp
    yellow mustard
  • 1 Tbsp
    chopped dill pickle
  • 1 Tbsp
    chopped bell pepper
  • 1 lg
    spanish olive, chopped
  • 1-2 Tbsp
    hormel bacon bits with jalapeños
  • cracked black pepper

How To Make kicked-up egg salad

    Cook eggs covered in simmering water for 10-12 minutes, remove from heat for 5 minutes, then place eggs in cold water for 10 minutes before peeling. Remove shells and mash eggs with a fork in a mixing bowl.

    Stir in mayonnaise, mustard, finely chopped vegetables, and jalapeño bacon bits. Season with cracked pepper as desired. Refrigerate if not eating immediately.
