This is such a great salad that's packed with robust Italian flavor. It makes a lot, so it's a good salad to take to potluck gatherings.

Ingredients For italian garbanzo bean salad

    (15-ounce) can garbanzo beans, drained
  • 1
    (15-ounce) can sliced black olives, drained
  • 1
    (14-ounce) can artichoke hearts, drained and quartered
  • 5 oz
    pepperoni, cubed (i used pepperoni minis)
  • 6 oz
    salami, cubed
  • 2 lg
    cucumbers, halved lenghtwise and slices
  • 1 c
    grape tomatoes (i cut them in half)
  • 1/2 lg
    red onion, chopped
  • 2 clove
    garlic, minced
  • 6 oz
    shredded mozzarella cheese
  • 1/4 c
    italian dressing
  • 1/2 lg
    lemon, juice of
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    dried oregano
  • 1 tsp
    italian seasoning

How To Make italian garbanzo bean salad

  • 1
    Combine all ingredients in a large bowl. Toss well, then refrigerate 1-2 hours before serving. Serve chilled.
