1- 15 canblack beans, rinsed

1 - 15 cangarbanzo beans, rinsed

1 - 15 candark kidney beans, drained

6 ozcolby jack cheese - cubed

1 1/2 cfrozen sweet corn, thawed and drained - or use fresh

1/2 - 3/4 ccelery, sliced thin

5green onions, sliced
-
1/2 csweet onion, diced
-
1 smred pepper, diced
-
1 1/2 cpicante sauce
-
2 clovegarlic, minced
-
3 Tbspextra virgin olive oil
-
3 Tbsplemon juice
-
1 tspsugar
-
1 1/2 - 2 tspdry cumin
How To Make delicious & colorful bean salad - cassies

1Drain all beans well. Place in a large bowl. Add the prepared vegetables & cheese and toss.

2In another bowl, add Picante sauce, garlic, oil, lemon juice, sugar and cumin. Whisk well and pour over the bean mixture. Mix well, then cover and chill for several hours, or overnight.
