This salad has a Mexican flair...so very flavorful...it would make a wonderful side dish for your Memorial Day cookout... Enjoy!

Ingredients For delicious & colorful bean salad - cassies

  • 1- 15 can
    black beans, rinsed
  • 1 - 15 can
    garbanzo beans, rinsed
  • 1 - 15 can
    dark kidney beans, drained
  • 6 oz
    colby jack cheese - cubed
  • 1 1/2 c
    frozen sweet corn, thawed and drained - or use fresh
  • 1/2 - 3/4 c
    celery, sliced thin
  • 5
    green onions, sliced
  • 1/2 c
    sweet onion, diced
  • 1 sm
    red pepper, diced
  • 1 1/2 c
    picante sauce
  • 2 clove
    garlic, minced
  • 3 Tbsp
    extra virgin olive oil
  • 3 Tbsp
    lemon juice
  • 1 tsp
    sugar
  • 1 1/2 - 2 tsp
    dry cumin

How To Make delicious & colorful bean salad - cassies

    Drain all beans well. Place in a large bowl. Add the prepared vegetables & cheese and toss.

    In another bowl, add Picante sauce, garlic, oil, lemon juice, sugar and cumin. Whisk well and pour over the bean mixture. Mix well, then cover and chill for several hours, or overnight.
