Ingredients For cucumber carrot salad

1/4 csweet chili sauce

2 Tbspseasoned rice wine vinegar

1 lgcucumber, peeled, thinly sliced

1 cmatchstick carrots

1/2 cpresliced green onions

1/2 cchopped red sweet pepper

1 smtomato chopped for garnish (optional)
How To Make cucumber carrot salad

1Whisk chili sauce and vinegar in medium bowl until blended.

2Peel cucumber; cut in half lengthwise and slice. Add cucumber and remaining ingredients to sauce mixture; toss to coat. Chill until ready to serve.

3Very Good. Double recipe or just use 2 cucumbers.
