This is an easy salad that you can prepare the day before for your Memorial Day Barbecue or for any occasion! Delicious!! :)

Ingredients For cornbread salad

  • 2 can
    beans,15 oz. (black beans,pinto or black eye,your choice)
  • 1 pkg
    cheddar cheese, shredded,12 oz.
  • 1 md
    bell pepper,diced
  • 1 sm
    cilantro, fresh bunch
  • 4 md
    roma tomatoes,ripe,diced
  • 1 sm
    can sliced black olives
  • 1/2 tsp
    salt
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    cumin,ground
  • 1 md
    lime,juiced and zest
  • 3 c
    corn bread,cubed
  • 1 pt
    sour cream
  • 1/2 c
    mayonnaise
  • 4 md
    scallions,diced

How To Make cornbread salad

  • Quick,easy and delicious!!:)

    Combine the mayonnaise with the sour cream,diced scallions(reserve some for garnish)set to the side. Combine the diced peppers,plum tomatoes,cilantro,lime juice,lime zest,chili powder,salt and cumin,set to the side. Open and rinse the beans of your choice,drain well,set to the side.

    Using a clear bowl or trifle dish begin layering the salad beginning with half of the cubed corn bread,one can of the beans,half of the tomato mixture,shredded cheese and then the sour cream,repeat. Garnish with scallions and shredded cheese and refrigerate until chilled and set.
