cassies crunchy & creamy pea salad
Love peas and love this salad...I had some veggies I needed to use up from the holiday...this salad is how I chose to use them...very tasty indeed...enjoy!

Ingredients For cassies crunchy & creamy pea salad

16 ozfrozen peas, thawed and drained

2baby carrots, shredded

1/2cucumber, peeled and diced small

2 - 3 ozham, julienned

1 cshredded, cheddar cheese
-
2 ozswiss cheese, cubed

1 ccashew halves - if not serving till the next day - add these then to retain their crunchiness
-
1 stalkcelery sliced thin or diced
-
1 cred onion, diced
-
2green onions, tops included, sliced
- DRESSING
-
1/2 ccheese ranch ( is what i used ) dressing or regular ranch

1/4 csour cream
-
1/4 - 1/2 cmayonnaise
-
1/2 tspdried or fresh chopped dill
-
1 Tbspsugar
-
1/2 tspdried mustard
-
1/2 tsppepper
-
1/2 tspkosher salt or to taste
How To Make cassies crunchy & creamy pea salad

1In a medium sized bowl add the peas and all other veggies and cheeses. ( add the cashews before serving )

2In another small bowl; mix dressing ingredients...adjust seasoning to your own taste if needed. Stir dressing into the pea mixture; coat evenly and refrigerate till chilled, at least a few hours till flavors mesh.

3Enjoy...even better the next day, if there are any leftovers...
