Ingredients For berry spinach salad

  • 8 c
    spinach leaves, washed and dried
  • 2 c
    fresh blueberries
  • 1 1/2 c
    halved fresh strawberries
  • 1 c
    fresh blackberries
  • 1/4 c
    broken pecans, lightly toasted
  • feta cheese (optional)
  • DRESSING:
  • 1/2 c
    halved fresh strawberries
  • 1/4 c
    raspberry vinegar
  • grated peel of 1 lemon
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    honey
  • 2 tsp
    extra-virgin olive oil

How To Make berry spinach salad

  • 1
    Combine spinach, blueberries, strawberries, and blackberries; toss.
  • 2
    To prepare dressing mash strawberries to a pulp.
  • 3
    Add vinegar, lemon peel, juice, honey, and oil. Stir well with a whisk.
  • 4
    Drizzle dressing over salad and sprinkle with pecans and feta.
