A different twist on Cole Slaw...I love it! Gets better the longer it marinates in the dressing. So, make sure you make it at least 4 hours before serving. ENJOY!

Ingredients For asian inspired slaw

1/2 mdhead, green cabbage or napa - shredded

2green onion, thinly sliced

1/2 mdred pepper, thin sliced or chopped

1 lgcarrot, thinly julienned

1 smgarlic clove, minced
-
1/2inch, ginger root, minced
- DRESSING
-
1/8 csoy sauce
-
sugarto taste, optional - i didn't use any
-
1/4 c+ 2 tablespoons, rice wine vinegar
-
blackpepper to taste
-
1/2 croasted peanuts
How To Make asian inspired slaw

1Mix soy and vinegar together. Set aside.

2In a medium bowl, add all other ingredients ( except nuts ) pepper to taste and toss.

3Pour dressing over vegetables and toss. I place it in a zip lock baggie and every so often toss it in the bag while chilling. Refrigerate for a good 4 hours. Before serving toss with roasted peanuts.
