The recipe does not call for the marshmallows to be melted into the jello; just added in when you add the cold water. I like the change, which is an idea I transferred from a favorite recipe of mine. Try it both ways!

Ingredients For lime delight

  • 2 c
    boiling water
  • 2 c
    cold water
  • 3 oz
    pkg ea lime and lemon jello
  • 1/2 pkg
    miniture marshmallows
  • 1 c
    pecans, broken
  • 8 oz
    crushed pineapple, drained
  • 3 oz
    cream cheese
  • 2 Tbsp
    vinegar

How To Make lime delight

  • 1
    Mix both jello mixes with boiling water; stir in marshmallows until melted. Add cold water. Pour into a 2 quart mold or dish. Refrigerate.

    Meanwhile, beat softened cheese with pineapple and vinegar. Add pecans. Fold this mixture into partially set jello. Chill.
