Ingredients For dressed up easy beet & goat cheese salad

4good sized beets, scrubbed, trimmed, cut into 1/2

1/3 cwalnuts, chopped

3 Tbsppure maple syrup

110 oz pkg mixed baby greens
-
1/2 cfrozen orange juice, thawed
-
1/4 cbalsamic vinegar
-
1/2 colive oil, extra virgin
-
2 ozsoft goat cheese
How To Make dressed up easy beet & goat cheese salad

1Place beets in sauce pan, cover w/ water. Boil 20-30 mins, or until tender. Drain, cool and cut into cubes.

2Place walnuts in dry skillet, over medium-low heat, cook until almost toasted. Stir in maple syrup. Cook, stirring, until coated. Remove pan from heat.

3In bowl, whisk together orange juice, vinegar and oil. Place baby greens on 4 plates. Divide walnuts evenly among plates. Place beets over greens. Dab each plate w/ goat cheese and drizzle w/ dressing.
