We love cucumbers and enjoy trying different salads. We had this and it was a great addition to a stir fry meal we had. Very refreshing and you can make it as spicy as you want by adding more red pepper flakes. I think the hardest thing is getting use to calling cucumbers a fruit when I am posting a recipe for them.

Ingredients For spicy asian cucumbers

  • 1
    english cucumber
  • 1 tsp
    salt
  • 1 Tbsp
    rice vinegar
  • 2 tsp
    sugar
  • 2 tsp
    soy sauce
  • 1/2 tsp
    sesame oil
  • 2
    sliced scallions
  • 1 clove
    minced garlic
  • 1 pinch
    red pepper flakes

How To Make spicy asian cucumbers

    Chop the cucumber and put in a bowl and add the 1 teaspoon of salt. Let sit for 10 minutes.

    Whisk the rest of the ingredients in a large bowl.

    Drain the cucumbers and toss with the dressing; season with salt if needed.

    Top with chopped cilantro if you want.
