Ingredients For orange-pineapple couscous

1 can11-oz. can mandarin oranges, liquid reserved

2 1/4 corange juice
-
1 1/2 tspground cumin
-
1 box10-oz. box couscous

3 Tbspolive oil
-
1 Tbspreduced-sodium soy sauce
-
3 Tbspfresh lime juice
-
1/4 cfresh cilantro, chopped
-
2 Tbspfresh basil, chopped
-
3 Tbspgreen onions, chopped
-
1 1/2 tspfresh ginger, chopped
-
1 can15 1/4 oz. can pineapple tidbits, drained
-
1/3 ctoasted pine nuts
How To Make orange-pineapple couscous

1Add enough orange juice to the mandarin orange juice to make 2 1/4 cups liquid. Bring the juices and cumin to a boil in a saucepan. Remove from heat and add couscous. Cover and let stand 5 minutes. Pour into a large bowl and let cool.

2Combine oil, soy sauce and lime juice. Stir into couscouls mixture. Add in mandarin oranges, cilantro, basil, green onions, ginger and pineapple. Sprinkle with pine nuts.
