Ingredients For mixed green salad w/ blueberry vinaigrette

  • 8 oz
    mixed greens
  • 1
    radish, thinly sliced
  • 1 lg
    carrot, grated
  • 1 c
    frozen blueberries, divided
  • 1/4 c
    olive oil
  • 2 Tbsp
    sugar free orange marmalade
  • 2 tsp
    lemon juice
  • 1 tsp
    dijon mustard
  • 1/4 tsp
    salt

How To Make mixed green salad w/ blueberry vinaigrette

    In a blender, combine 1/2 the blueberries, marmalade, lemon juice, mustard and salt. Blend until smooth.

    Place greens, radish in bowl. Place grated carrot over salad. Drizzle w/ dressing. Sprinkle w/ remaining blueberries.
