    fresh strawberries
  • 6-8 md
    fresh peaches, ripe but firm
  • 2 lg
    bananas
  • 1 md
    fresh pineapple
  • 2 c
    seedless grapes
  • 2 md
    oranges or tangerines
  • 2 md
    pears, ripe but firm
  • lemon juice
  • 1 c
    fresh berries (your choice)
  • 1 c
    chopped nuts (optional)
  • DRESSING INGREDIENTS
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 2 c
    pineapple juice
  • 1/2 c
    sugar
  • 2 lg
    egg yolks
  • 1 Tbsp
    grated orange rind
  • 2 c
    whipped cream

How To Make farmers market fruit salad (sallye)

    MAKING THE DRESSING: Whip the cream until stiff peaks stand up when tested, set aside In medium sized mixing bowl, whisk the egg yolks until frothy, set aside In heavy saucepan over medium heat, melt the butter and add the flour to make a roux. Stir constantly to keep from scorching. Add the pineapple juice and slowly bring to a boil, again stirring constantly Once it starts to boil, remove from heat Slowly add the sugar to egg yolks, whisking until creamy Graually stir the hot juice into egg mixture, set aside and allow to cool While syrup is cooling you can cut up your fruit Once syrup mixture is cool, fold in the orange rind and whipped cream

    PREPARING THE FRUIT: Use a large salad bowl and place fruit in it as you go: Remove stems from strawberries and cut in half. Peel peaches and cut into bite sized chunks Cut grapes in half if desired or leave whole Peel and core pineapple, cut into bite sized chunks Peel oranges and cut into thin slices Note: If you use tangerines, you can peel and use the segments whole Peel pears and cut into bite sized chunks Peel and cut bananas into slices, sprinkle with lemon juice to retard discoloration

    Pour dressing mixture over fruit and gently toss to make sure all fruit is covered. Add nuts if desired either by folding them into salad or using as a garnishment.
