cranberry-pecan salad with feta cheese

I LOVE this salad, and it's so easy to put together! I like that I can make this salad during the summer months, with the variety of fresh lettuce and spinach from our garden. I have also used the store bought (bagged) iceberg and romaine lettuce, which also has shredded carrots and red cabbage in it. While the feta cheese is tasty in this salad, I especially love the tartness and sweetness from the cranberries, and the added crunch from the pecans. But I think it's the raspberry vinaigrette dressing which makes this salad taste so good!

Ingredients For cranberry-pecan salad with feta cheese

  • 2-3 cups
    leafy salad greens (*see note)
  • 2-3 Tbsp.
    crumbled feta cheese
  • 2-3 Tbsp.
    dried cranberries
  • 2-3 Tbsp.
    chopped pecans
  • A few
    slices red onion, optional
  • A few
    slices radishes, optional
  • Dressing:
    raspberry vinaigrette (l used aldi's tuscan garden raspberry vinaigrette)
  • *Note:
    leafy greens used to make this salad - red & green romaine, red & green lettuce, iceberg, or spinach
  • ANOTHER SALAD VARIATION: BLUEBERRY-MANDARIN SALAD
  • to make this salad, add the following ingredients along with the leafy greens and raspberry vinaigrette dressing...
  • A few
    fresh blueberries
  • A few
    canned mandarin oranges (drained well)
  • 2-3 Tbsp.
    crumbled feta cheese
  • 2-3 Tbsp.
    dried cranberries
  • 2-3 Tbsp.
    chopped pecans
  • Omit:
    the radishes and red onion, when making the blueberry-mandarin salad.

How To Make cranberry-pecan salad with feta cheese

    To make the original Cranberry Pecan Salad with Feta Cheese, place leafy salad greens in a bowl.

    Top with the cheese, cranberries, and pecans.

    Add the slices of red onion and radishes, if using.
  • 4
    Pour in the desired amount of vinaigrette dressing, and enjoy your salad. (I would go easy on the dressing, and just add a little bit at a time.)

    7/8/2014 - I did want to mention... The raspberry vinaigrette dressing I used to make this salad, I purchased from from Aldi's. Not only was it reasonably priced ($1.29 for a 16-oz. bottle), but it's also very good! I think Aldi's only carries this dressing during the summer months, so if you can get your hands on this dressing, I suggest stocking up on it. I love this bottled dressing!
