This is my variation of my mother-in-law's cranberry salad. She always made it for Thanksgiving and Christmas. My husband doesn't feel like he has had his holidays without it.

Ingredients For claudia's cranberry salad

12 ozfresh or frozen cranberries

1 lgorange, zested (reserve zest) and peeled

zest of one orange

1 lg(20 oz) crushed pineapple, not drained

2 csugar

1 cpecans, chopped

2 sm(3 oz each) pkg black cherry jell-o

2 cboiling water
How To Make claudia's cranberry salad

1Grind cranberries and peeled orange with food grinder or food processor.

2Stir in pineapple (including liquid from can), orange zest and sugar. Let stand while dissolving Jell-O in 2 cups boiling water.

3Add cranberry mixture to Jell-O. Refrigerate to set.
