claudia's cranberry salad

This is my variation of my mother-in-law's cranberry salad. She always made it for Thanksgiving and Christmas. My husband doesn't feel like he has had his holidays without it.

Ingredients For claudia's cranberry salad

  • 12 oz
    fresh or frozen cranberries
  • 1 lg
    orange, zested (reserve zest) and peeled
  • zest of one orange
  • 1 lg
    (20 oz) crushed pineapple, not drained
  • 2 c
    sugar
  • 1 c
    pecans, chopped
  • 2 sm
    (3 oz each) pkg black cherry jell-o
  • 2 c
    boiling water

How To Make claudia's cranberry salad

  • 1
    Grind cranberries and peeled orange with food grinder or food processor.
  • 2
    Stir in pineapple (including liquid from can), orange zest and sugar. Let stand while dissolving Jell-O in 2 cups boiling water.

    Add cranberry mixture to Jell-O. Refrigerate to set.
