I made chicken salad one day and had some fresh blueberries, and thought, "why not?" so I added them along w/ some almonds. What a refreshing salad!

Ingredients For refreshing chicken salad w/ blueberries and almond

  • 2
    cooked boneless chicken breasts
  • 1/2 c
    chopped red onion
  • 1 Tbsp
    rice wine vinegar
  • 1/2 c
    scallion, minced
  • 1/4 c
    chopped parsley
  • 1/2 c
    dried cranberries
  • 1 c
    fresh blueberries
  • 1/2 c
    light mayonnaise
  • 2 Tbsp
    plain light or low fat yogurt
  • 1/4 c
    honey mustard
  • 1/4 c
    sliced almonds

How To Make refreshing chicken salad w/ blueberries and almond

    Dice chicken, place in lg bowl. Add red onion, vinegar, scallion, parsley, cranberries and blueberries.

    Gently stir to mix. In another bowl, whisk together mayonnaise, yogurt and mustard. Pour over chicken mix and toss gently. Sprinkle w/ almonds.
