Ingredients For mexican ranch chicken salad

  • 1 Tbsp
    olive oil
  • 2 lb
    boneless, skinless chicken breasts
  • 1 c
    light ranch dressing
  • 1/2 c
    light mayonnaise
  • 1 pkg
    ortega taco seasoning mix
  • 1
    stalk celery, sliced
  • 1/4 c
    chopped red bell pepper
  • 2 Tbsp
    chopped green onion
  • 1/2 c
    reduced-fat, shredded mexican cheese
  • 10 oz
    mixed greens, preferably organic

How To Make mexican ranch chicken salad

  • 1
    heat oil in lg skillet over med-high heat. Add chicken and cook until no longer pink. In bowl, combine dressing, mayonnaise and taco seasoning. Add to bowl, the chicken, celery, red bell pepper and green onion.

    Mix untill all is cotaed. Serve over mixed greens.
