Really easy to make. No cooking and a low calorie meal. I started making this years ago when I was on Weight Watchers for a quick dinner.

    hearts of romaine lettuce
  • leftover boneless chicken or rotisserie chicken
  • 2 c
    four bean salad, jarred
  • 1 c
    sargento mexican blend cheese, traditional cut
  • 1 c
    salsa, jarred

How To Make easy mexican chicken salad

    Wash the lettuce and tear into bite size pieces.
  • 2
    Cube the chicken.
  • 3
    Drain the bean salad.
  • 4
    Toss the lettuce, chicken and beans together, top with salsa and cheese.
