chinese chicken salad
My dear friend Paula shared this recipe with me many years ago. It's great for summer BBQ's or just for a fresh change of pace. I made this for lunch yesterday and my Honey loved it.

Ingredients For chinese chicken salad

4 clettuce, shredded thin

1 lbchicken breast, cooked sliced thin strips

1/2 bagcrunchy chow mein noodles, or 1 can

1/2 baggarlic ginger wonton strips, or fry your own

4 Tbsptoasted slivered almonds

8 Tbspsugar
-
4 Tbspsesame oil
-
2/3 cred wine vinegar
-
1 cpeanut oil
-
salt & pepper
-
1 canmandarin oranges, drained
How To Make chinese chicken salad

1In a blender prepare the dressing: sugar, sesame oil, red wine vinegar, peanut oil, salt and pepper.

2In a large bowl: lettuce, chow mein, wonton strips,oranges and almonds

3Add in the prepared dressing slowly until you get the desired amount of dressing on your salad. I usually mix only what I'm going to use & have dressing left over. It makes a really big salad.

4It gets soggy quick so be sure to hold off on tge dressing until you are ready to serve.
