Ingredients For zesty potato salad

4 mdunpeeled potatoes, cooled, cut into bite size pieces

1/2 smsweet onion, finely minced
-
1/4 cspanish olives, finely chopped

2 lgeggs, hard boiled, coarsely chopped

1/2 cantuna, drained, flaked, optional
- MAYONNAISE DRESSING
-
1/4 cmayonnaise
-
1/2 - 1 Tbspsherry vinegar
-
1 Tbsplemon juice, fresh
-
1 Tbspcoarse mustard
-
1/2 tsppaprika, smoked
-
1/8 tspgarlic salt & onion salt
-
1/4 tspfresh ground black pepper
-
smdrizzle virgin olive oil
- GARNISHES

1 lghard boiled egg, peeled, chilled, sliced
-
1 Tbspfresh parsley, finely chopped
-
1/2 - 1 Tbspfresh cilantro, finely chopped, optional
-
6black olives, quartered
-
1/2 tsppaprika, for sprinkling
How To Make zesty potato salad

1In a small bowl add all the mayonnaise dressing ingredients and mix well. Taste and season with a pinch of sea salt and more black pepper if necessary. Then set aside until needed.

2In a large bowl gently add the prepared potatoes, onions, olives, eggs and tuna. Now add the mayonnaise dressing and gently mix until just combined. Cover and put in fridge to chill until needed.

3When ready to serve garnish the salad with the egg slices, parsley, cilantro, olives and a few pinches of paprika.
