This a great way to get that yummy potato salad you crave. But with about 1/2 the fat. I actually got this from Rachel Ray....And it was Kid tested by very own 9 year old who only like Pizza, Chicken Nuggets and French Fries....She liked it!

Ingredients For vegged out potato salad

1 pkgcherry tomatoes

1/2 cchopped celery
-
1 lgcucumber cut into chunks

1/4 ccilantro or parsley
-
1 lbpotatoes
-
1/4 clight or reduced fat may or light sour cream

2-3 Tbspsweet relish
-
1/4 conions
-
2-3 Tbspyellow mustard
-
1-2 pinchof salt and pepper (season to your liking)
How To Make vegged out potato salad

1Boil Potatoes till they are soft. Chop Potatoes into chunks

2Chop Celery, Cucumber and Cilantro or Parsley

3In a Bowl Mix Fat Free Mayo or Sour cream with Sweet relish, yellow mustard, onions, and seasoning and Mix together.

4Add Veggies to potato’s and then add dressing mix….Stir altogether and out in frig for at least 1 hour!
