This recipe came from my mother. I've tweeked it a bit, and it remains the best I've ever had.

Ingredients For the really best potato salad

6 mdyukon gold potatoes

6 lgeggs, hard boiled
-
2ribs celery, chopped
-
5radishes, sliced
-
1 mdgreen pepper, chopped

1 bunchgreen onions, white and green
-
1/3 cdill pickles, diced
-
1/3 cpimentoed olives, chopped
-
6 slicebacon, cooked and crumbled
- DRESSING
-
1 cmayonnaise
-
2 Tbspmustard of choice
-
1/4 cjuice from olives or pickles

dashsalt to taste

1/2 Tbsppepper
How To Make the really best potato salad

1Peel and dice potatoes. Cook until just fork tender. Cool.

2Cook eggs until hard boiled. Cool, peel and chop roughly

3Add all ingredients except for the bacon.

4Prepare dressing. Add to salad until coated. A bit more or less as you desire. Top with bacon just before serving and chopped chives if you have them.
