I was tired of the same old potato salad at bbq's and wanted a lower carb alternative!! So here I came up with a Sweet Potato Salad!! Super tasty and a huge hit at every party!!

Ingredients For sweet potato salad

6sweet potatoes, peeled, cubed, cooked and cooled

1 cmayonnaise

1shallot, chopped

1 canpineapple chunks, canned

2 Tbsppineapple juice (from canned pineapple)

2 Tbsporange juice
-
1 Tbspginger powder
-
2 tsppaprika, ground
-
1 1/2 Tbspcinnamon, ground

1/4 cgreen onions, chopped (optional)
How To Make sweet potato salad

1Cook sweet potatoes until just about tender

2While sweet potatoes are cooking, chop the shallots into semi small pieces

3Open the can of pineapples and reserve the juice, add pineapples to bowl with shallots

4In a seperate bowl combine 1 cup of mayo with 2 tbs pineapple juice, 2 tbs orange juice, ginger, paprika and cinnamon. Use a wire whisk to combine.

5After potatoes are cooked and cooled, add to pineapples and shallots. Add dressing to potatoes and fold gently.

6Place salad on serving platter and top with cut green onions
