Here in Louisiana sweet potatoes are called "Yams". You can serve this hearty potato salad all year-round. It's a wonderful accompaniment to ham or pork and makes an easy-to-serve addition to a buffet table.

Ingredients For sweet potato salad

  • 3 lb
    sweet potatoes, cooked, peeled and cubed
  • 1 c
    chopped sweet red pepper
  • 1/2 c
    chopped onion
  • 1 1/4 c
    mayonnaise
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    hot pepper sauce

How To Make sweet potato salad

  • 1
    In a large bowl, toss sweet potatoes, red pepper and onion. In a small bowl, blend remaining ingredients; add to potato mixture and toss to coat. Chill. If you're not use to hot pepper sauce, add a little bit at a time to check for strength.
