spicy potato salad

This potato salad has a very distinct flavour. It's a bit tart and a little spicy. It went well with my Lemon White Fish. I added some Vegenaise to mine and it was really good.

Ingredients For spicy potato salad

6 lgyukon gold potatoes, cleaned

3 lgkosher dill pickles

1 cchopped celery
-
1/2 mdonion chopped

2 clovegarlic, crushed

1 jarolives
-
4 Tbsplight oil
-
4 Tbspapple cider vinegar

2 Tbspmustard, dijon or yellow

2 clovegarlic, minced

2 tspdill, dried

1 1/2 tspsea salt

1 tspblack pepper
How To Make spicy potato salad

1Clean the potatoes and cut into large chunks. Boil until tender, but not soft. Drain and rinse in cold water.

2Drain again and chill in the fridge.

3Dice the pickles, celery and onion, chop the olives and put in a large bowl.

4Add the vegetable mixture the oil, vinegar, mustard, garlic, dill, salt and pepper and mix well.

5Cube the chilled potatoes. Carefully fold the other ingredients in with the potatoes.

6Chill 1 hour and serve.
