this has become a favorite with not only my family but with freinds of family. it is time consuming but well worth it.

Ingredients For roasted potato salad

  • 2-3 lb
    diced red skin potato's
  • 1 c
    cooked and dice bacon, i use the real bacon in the jar to save time.
  • 1-1 1/2 c
    mao any type, add or subtract to your own taste
  • 1/2 c
    diced onions
  • 1 c
    celery
  • 1 pkg
    dry itlian dressing
  • 1/2 c
    oil, any kind

How To Make roasted potato salad

  • 1
    dice up your potato's. cover them with the oil and spread on baking sheet. and bake under the broiler for 20 min, stiring half time. you want a nice toasted color. and cool.

    dice you onions and celery and bacon. set aside.
  • 3
    when the potato's are cooled mix in the diced veggies, bacon and dry itlian and mao. stir untill just mixed.

    store in the frig. it taste the best same day. and better the next
