Ingredients For rice potato salad

4 clong grain white rice, cooked, cooled

8radishes, sliced

4hard boiled eggs, chopped

1 mdcucumber, seeded & chopped

2 ccelery, thinly sliced

1/2 conion, chopped

1 1/4 cmayonnaise

3 Tbspmustard
-
3/4 tspsalt
How To Make rice potato salad

1Combine rice, radishes, eggs, cucumber, celery & onion. In a separate bowl, stir together mayo, mustard and salt. Pour over rice mixture & toss. Cover and refrigerate at least 1 hour.

2NOTE: I prefer to use Uncle Ben's Long Grain White Rice. It is a firm rice that isn't sticky.
