Red potatoes, White onions, and Bleu vegetable dip dressing! My husband loves bleu cheese, and this seemed like a natural fit to go with a grilled roast beef sandwich.

Ingredients For red, white, and bleu potato salad

4 cred potatoes, cooked, cubed to 1/2" (i baked mine in my crock-pot)

1/2 cwhite onion, finely minced

1/2 cbleu cheese vegetable dip (i used marzetti's)

2 Tbspmayonnaise

2 Tbspsour cream
-
2 Tbspcreamy horseradish sauce (i used kraft brand)

2 Tbsp"hot" pickle relish (i used heinz)

2 Tbspdill pickle relish (i used heinz)

1 Tbspplain mustard

1/8 tspcelery seed
-
pinchcrushed rosemary leaves

1/4 tspdried parsley flakes

salt and pepper to taste
How To Make red, white, and bleu potato salad

1Mix all ingredients in medium mixing bowl. Refrigerate for at least an hour before serving. Chopped celery, chopped hard-boiled eggs, chopped green peppers, and/or chopped jalapeño peppers are optional additions.
