Ingredients For quick and easy hash brown potato salad

  • 2 qt
    water
  • 1 bag
    Ore Ida frozen cubed hash browns
  • 1/4 c
    mayonnaise
  • 1/4 c
    sour cream
  • 2 Tbsp
    dill pickle juice
  • 1 Tbsp
    yellow mustard
  • salt and pepper, to taste
  • 2 stalk
    celery, diced
  • 1 sm
    shallot, diced fine
  • 2 sm
    dill pickles, diced
  • 2
    hard boiled eggs, diced

How To Make quick and easy hash brown potato salad

  • 1
    Bring salted water to a boil. Add the potatoes and cook for 4-5 minutes. Drain thoroughly and add to a mixing bowl.

    Add mayo, sour cream, dill pickle juice, mustard, salt & pepper to a small bowl and mix well.

    Add celery, shallots, dill pickles, hard boiled eggs, salt and pepper to the potatoes. Add the dressing to the potatoes and mix well.

    Cover and store in refrigerator until ready to serve. Refrigerate remaining potato salad.
