potato turkey salad
For many years, I made my own potato salad. Then at some point I got lazy, and started buying it already made at Safeway. I am hungry for the real stuff, so this is what I'm serving my family tonight. (I pre-tasted it, of course - YUM!)

Ingredients For potato turkey salad

6 smpotatoes

1 ccucumber, chopped

1 ccarrot, chopped

1/2 conion, chopped

2hard boiled eggs
-
8 ozsliced turkey (package or deli)

1/2 cmayo
-
1 Tbspwhite vinegar

1 Tbspcelery seed
-
1 Tbspsugar

salt and pepper to taste
How To Make potato turkey salad

1Assemble ingredients.

2Peel potatoes, cut into quarters or eighths. Put in pot of water, add salt, bring to a boil. Cover and cook till soft. Drain and set aside.

3In a bowl, place cucumber, carrot, onion, and chopped hard boiled eggs.

4Cut turkey slices into cubes, add to bowl with vegetables.

5In a different (large) bowl, place potatoes; mash about half of them, leaving some chunks whole. Add the chopped veggies and turkey to the potatoes. Mix well.

6Add mayo, vinegar, sugar, celery seed, s & p; mix well to make sure everything gets coated equally. Chill and serve.
