Knorr used to make a marinade mix for non-mayonnaise type potato salad. It was available at German and European delis all over the US and Australia, as far as I know. It recently became unavailable, so I've been experimenting to make my own KARTOFFELSALAT MIT KLARER KRÄUTERMARINADE! It reminds me of the potato salad my German Oma made when I was a kid! (Prep time includes cooking the potatoes. Substitute wine vinegar for herbal vinegar if necessary)

Ingredients For potato salad with clear herbal marinade

1 lbred potatoes, small

1/2 cwater
-
1 tspchicken or vegetable bouillon granules

1 Tbspminced mixed herbs (parsley, thyme and chives)

3-4 Tbspherbal vinegar (kuhne salata seasoned vinegar)

3 Tbspolive oil
-
1 pinchsalt and pepper, or to taste

1 tspmustard (e.g. düsseldorf style)

1 pinchsugar

1/2 conion, minced
How To Make potato salad with clear herbal marinade

1Wash potatoes and boil until barely tender. Cool. Peel and slice. Put into bowl.

2Measure all other ingredients into a pot and heat together briefly. Pour warm mixture over potatoes.

3Stir and let potatoes steep for about an hour, stirring occasionally. Serve at room temperature.
