This lovely exotic potato salad will delight your taste buds, with big bold flavors, that blend beautifully together, for a spicy treat. It would also be wonderful rolled in a pancake or as the filling for samosa. I hope you will enjoy!

Ingredients For potato salad - nepalese style

2 cups potatoes, peeled, dice 1/2"

1 tsp tumeric, ground

1/2 cup mustard oil, or vegetable oil

5 tbsp sesame seeds, white

1 tbsp fenugreek seeds
-
1/2 tbsp coriander seeds (optional)

1/4 onion, finely chopped
-
1 tsp salt
-
1/2 tsp black pepper
-
4 limes, freshly juiced
-
2 tsp chili flakes
-
2 tbsp ginger, finely chopped

1/4 cup fresh cilantro, finely chopped
How To Make potato salad - nepalese style

1In a large pot add the potatoes and the tumeric. Drain the potatoes and place to cool in a large bowl.

2Heat the mustard oil to smoking point, then remove from heat and allow to cool for 1 minute.

3Into the pan of oil add the sesame seeds, fenugreek seeds, coriander seeds and the finely chopped onion, fry until a light golden brown. (you don't want this to burn) Now add in the chili flakes and the ginger, fry briefly and remove everything with a slotted spoon.

4Mix the fried spice mix into the potatoes and add the fresh chopped cilantro. Taste and adjust seasonings if necessary.
