This is one of my mom's recipes! She pasted when I was 16. My family loves this dish!!!

Ingredients For potato salad

  • 6 md
    potatoes
  • 5 lg
    egg, hard boiled
  • 5 md
    green onions
  • 3/4 c
    mayonnaise, light
  • 2 Tbsp
    prepared yellow mustard
  • 1/3 c
    sweet relish
  • 1 pinch
    paprika, sweet mild

How To Make potato salad

  • 1
    Wash potatoes, cover with water and heat to full boil,cook for 30 minutes, Drain and cool to room temp.

    Peel and dice potatoes and 4 eggs to bite size chill for 30 min.

    Mix the mayo, mustard,diced green onions, sweet relish and celery seed, with the potatoes and eggs.

    Slice the remaining egg lay on top of potato salad and dust with paprika. Cover and chill at least an hour or til ready to eat.
