Ingredients For potato salad

6-8 mdrusset potatoes, skinned, cubed & boiled

1/4 cdiced onion
-
4eggs, boiled, peeled, & chopped

2 Tbspsweet pickle relish

1 cmiracle whip, light
-
1 cmayo, low fat
-
1 1/2 Tbspbold & spicy mustard

1roasted red bell, chopped (or pimento)

1 tspblack pepper
How To Make potato salad

1Boil the potatoes till tender, & drain. Boil the eggs, cool & peel. Mash the potatoes adding a very small amount of milk. Chop the eggs and red bell.

2In a large bowl mix together all ingredients together. Refrigerate. (Add more miracle whip or mayo if desired).
