This recipe came from my mom who took it to church socials for Memorial Day or Fourth of July. She thought it was good to take to socials since there were no eggs or mayo in it.

Ingredients For patriotic potato salad

  • 1 1/2 lb
    red potatoes, unpeeled
  • 1/2 c
    green bell pepper, chopped
  • 1/2 c
    red bell pepper, chopped
  • `1.2 c
    yellow bell pepper, chopped
  • 1/2 c
    celery, chopped
  • 1/2 c
    pitted ripe olives, halved
  • 1/2 c
    fresh parsley, chopped
  • 2
    green onions, thinly sliced diagonally
  • 1/2 c
    olive oil
  • 1/4 c
    spicy brown mustard
  • 3 Tbsp
    lemon juice
  • 1 tsp
    salt
  • 1 tsp
    dried oregano leaves
  • 1/8 tsp
    pepper

How To Make patriotic potato salad

    Wash and quarter potatoes. Cook potatoes in boiling water to cover 10 minutes or until tender. Drain.

    Place potatoes in a large bowl. Add green peppers and the next 6 ingredients; toss gently.

    Combine olive oil and remaining ingredients in a bowl; Whisk to combine. Pout the mixture over the vegetables. Toss gently. Cover and chill before serving.
