I've never had a potato salad exactly like my mom's. The potatoes are shredded instead of diced or cubed and the dressing is sweet and tangy instead of savory. Our summer family gatherings ALWAYS include her potato salad and we all love it! I recommend tasting the dressing before adding it to the potatoes - my mom never measures the ingredients but these measurements are as close as I could get!

Ingredients For mom's potato salad

8-10 mdpotatoes - cooked, peeled, shredded & chilled

4hard-boiled eggs, diced and chilled

2celery stalks, diced

1 smyellow onion, diced finely
- DRESSING

2 cmiracle whip
-
3 Tbspyellow mustard

1/2 csugar
-
1 tspvinegar
-
salt to taste
-
paprika to garnish
How To Make mom's potato salad

1Cook potatoes and eggs; chill before combining with remaining ingredients.

2Mix dressing ingredients and chill. Taste before adding to potatoes and adjust flavors as desired.

3Dice celery and onion; combine with shredded potatoes and diced eggs.

4Stir in dressing. Garnish with a few shakes of paprika and keep chilled before serving.
